I'm hungry!

Delicious Baked Oatmeal, and it's totally healthy!
So, being recently diagnosed Diabetic, I'm trying to find recipes and put together an awesome Lacey and Boys cookbook I can go to when it's time to eat, that my boys will actually eat and are totally NORMAL. By saying normal, I mean none of those fancy recipes with ingredients you swear you can only find in Europe and probably might be able to order on Amazon for the cost of your first born. Come on, I'm a single mama on a budget and we need to eat what I can find at our local grocer store! Anyway...... 

Yesterday I made banana peanut butter baked oatmeal muffins, that I thought would last through the week, uh nope, Cash and Owen had them devoured before we met my mom for lunch at noon! I decided to try a different version today instead, I added old fashion oats, coconut, some raw honey from Whole Foods, walnuts and flax oil... of course there's more in there, like almond/coconut milk and egg whites, but I'm super excited to see how these come out and I'm pretty sure the boys will finish them off today as well. I feel like a much better mommy having healthy snacks around. Seriously, try these! You will love them.

Recipe (I didn't really measure anything, I just eyed it and threw it in) 
Lacey's Baked Coconut Oatmeal Muffins

Dry, mix together in separate bowl
3 cups old fashion oats
1 cup coconut
1/2 cup brown sugar
1/2 cup honey
1 tsp. baking powder
1 tsp. salt (optional)
1/2 cup walnuts (or choice of nuts or none at all... more or less however you please)

Wet, mix together in separate bowl
1 1/4 cup almond, coconut, or regular milk
1 tsp. vanilla 
1 tsp. coconut extract 
1 egg
2 egg whites
1 spoon full flax seed oil 


Preheat oven to 350
Mix wet ingredients to the dry.
Oil up the muffin tin, I used olive oil, you can use the sprays.. whatever works best for you. 
Fill with oatmeal mix to the top, overflowing if you'd like (they won't raise like muffins do)
Bake for 20-25 minutes. You can have them soft or crispy tops, I like them crispy on top.
